Who doesn’t love homemade chicken noodle soup? It can make any day better and especially when you’re feeling under the weather and crave some comfort.
That was my weekend. Feeling less than 100%, I mustered up the energy to make some homemade chicken soup for the fam. Fall is a perfect time to bring out those recipes when you feel a chill in the air and just want something warm, and nothing says comfort like chicken soup. Eating chicken soup to me feels like being wrapped up in a warm blanket 🙂
I apologize for the less than perfect food pics, I had not intended to create a blog post sharing how I made the dish, but when I posted a pic to my Instagram Stories, the requests starting rolling in for the recipe. So here it is!
How to Make Homemade Chicken Noodle Soup
Ingredients
- 1 Tablespoon Olive Oil
- 2 Cups Cooked Chicken – I like to dice up pieces from a rotisserie chicken
- 1 Medium Onion, chopped
- 2 Carrots, sliced
- 4 Stalks Celery, sliced
- 2 Teaspoons Garlic, minced
- 1 Bay Leaf
- 1/4 Teaspoon Freshly Ground Pepper
- 2 Cups Dry Egg Noodles
- 6 Cups Low Sodium Chicken Broth
What makes this recipe so good and easy? I use low sodium chicken broth combined with rotisserie chicken. I don’t add any extra salt to the soup. I feel that between the flavoring of the rotisserie chicken and the salt already in the broth, there is more than enough sodium needed to make this dish tasty. The recipe is so quick and easy, I’m sure you will love it too.
Confession: In my less that perfect state, I forgot to add the carrots and forgot to use my dutch oven 🙄
Directions to Make Chicken Soup
1.) In a large pot or Creuset Dutch Oven, heat olive oil and add onions, celery, carrots and garlic. Cook over medium heat for 4 minutes.
2.) Add remaining ingredients and bring to a boil.
3.) Cover and simmer on low for 10 minutes.
It’s that easy. I don’t add any chicken skin or any other spices. The soup is perfectly seasoned as is. I hope you enjoy the recipe as much as my family does! I made 2 pots over the weekend and no left overs in sight. This comfort soup just hits the spot perfectly.
With Thanksgiving right around the corner, you can use this recipe to make turkey noodle soup, just replace chicken with left over turkey.
