Another tasty KETO friendly recipe from the ruled.me cookbook that is easy and super yummy.
I’m on week 4 of a KETO diet and have lost approximately 7 lbs. My goal is 10 lbs, so I’m doing pretty well, and that’s with a little bit of beer cheating too 🙂
For this bacon cheeseburger soup, you will need the flooring ingredients:
2 slices Bacon
8 oz. Ground Beef( 80/20 )
2 1/2 cups Beef Broth
1/2 tsp. Garlic Powder
1/2 tsp. Onion Powder
2 tsp. Brown Mustard
3/4 tsp. Kosher Salt
1/2 tsp. Black Pepper
1/4 tsp. Red Pepper Flakes
3/4 tsp. Cumin
3/4 tsp. Chili Powder
2 tbsp. Tomato Paste
1 medium Dill Pickle
1/2 cup Shredded Cheddar
2 oz. Cream Cheese
1/3 cup Heavy Cream
Cook bacon in a pan until crispy, then set aside.
Add ground beef in the bacon fat and cook until browned on one side, flip and brown on other side.
It seems so counter intuitive to cook anything in bacon fat! Normally I would discard the bacon fat, add olive oil and continue, but with the KETO diet, bacon fat is ok!
Transfer beef to a pot, and move it to the sides. Add butter and spices to the pan and let the spices sweat for 30-45 seconds.
Add beef broth, tomato paste, cream cheese, and pickles to the pot and let cook for a few minutes until melted. I don’t like pickles, so I left them out.

I am trying out a new grater for the first time (HERE). This one has a container on bottom to catch the grated foods, and different style of grating, course, medium and fine.
I definitely like the container feature, especially when following the KETO diet and measuring is so important.
Turn to low heat. Cook for 20-30 minutes.
Turn stove off , then finish with heavy cream and crumbled bacon. Stir well and serve. This makes 2 servings if you’re following the KETO diet.
