(KETO) Low Carb Recipe – Bacon Avocado Muffins

My love – hate relationship with the Ketogenic diet has led me to go on- and- off the popular regime many times over the years. 

The ketogenic diet is a low carb, moderate protein, and high fat diet which puts the body into a metabolic state known as ketosis. When your body is in a state of ketosis, the liver produces ketones which become the main energy source for the body. The ketogenic diet is also referred to as keto (key-toe) diet, low carb diet, and low carb high fat (LCHF).

The diet is based around the premise that your body was designed to run more efficiently as a fat burner than a sugar burner.

What I love about the diet? Weight comes off very quickly and I am able to stick to the regime pretty well and the meals are super yummy. At no other time in my life would I deliberately ingest bacon grease, and even add butter to it! Seems unhealthy right? But this is a high fat diet.

What I don’t like about it? Previously, when I was on the diet, I experienced complete lack of energy and total fatigue. All I wanted to do was sleep. I also developed kidney stones and ended up in the ER because the pain was so intense. You can read more about that HERE, along with a delicious recipe for chicken enchilada soup.

This time around, I am approaching the diet differently. I will add more carbohydrates than the diet suggests to keep me from developing total fatigue, and I will drink a lot more water to avoid kidney stones.

Today, I’m sharing a breakfast recipe for Bacon Avocado Muffins from the Ruled.Me recipe book.

5 large Eggs
5 slices Bacon
2 tbsp. Butter
1/2 cup Almond Flour
1/4 cup Flaxseed Meal
1 1/2 tbsp. Psyllium Husk Powder
2 medium Avocados
4.5 oz. Cheddar Cheese
3 stalks Spring Onions
1 tsp. Minced Garlic
1 tbsp. Cilantro
1 tsp. Dried Chives
1/4 tsp. Red Pepper Flakes
Salt and Pepper
1 1/2 cups Unsweetened Coconut Milk
1 1/2 tbsp. Lemon Juice
1 tsp. Baking Powder

suQRqC%KQpa8oncXIwIuGQMix together almond flour, flax seed meal, psyllium husk, spices, coconut milk, and lemon juice. Set aside. Preheat oven to 350F.

x7IWPbE2Qq2l3hpbK+WoZACook bacon over medium-low heat and once crisp add butter to the pan. Do not drain the grease.

I like to cut the bacon before adding to the pan.

fullsizeoutput_86b3 Measure the batter between 12 greased cupcake molds or 24 mini cupcake molds.

    1. Hi Lynn! The diet is supposed to help people with conditions like high cholesterol and heart disease. The diet suggest a lot of high fat meals but not a lot of red meat. It uses healthy fats like avocados and olive oil. Personally, I wouldn’t be on it forever but it’s a good jump start for a few months while I work off my winter weight 😉

  1. My niece has done well on the Keto diet. Hubby and I have been thinking about trying the diet when we return from vacation mid August. These muffins look delicious! I will make some next week for a luncheon I have planned. Will let you know how they turn out. They have to be good because of the bacon!
