The fragrant scent of this KETO friendly dish is enough to get you craving low carb foods for life!
This delicious recipe is from the ruled.me cookbook and has a delicate blend of lemongrass and turmeric.
For this recipe, you will need the following ingredients:
2 tbsp. Coconut Oil
1 inch Ginger
1 Green Chile
2 Shallots
2 cloves Garlic
1 tsp. Turmeric Powder
1 stalk Lemongrass
4 Chicken Drumsticks (~17 oz.)
1/4 cup Coconut Milk
1/3 cup Water
1/2 tsp. Salt
1 tbsp. chopped Cilantro
This makes 2 servings. Each serving is:
525.8 Calories, 37.3g Fats, 5.5g Net Carbs, 39.4g Protein.
Preparation:Bruise lemongrass by hitting it.
Pound ginger, green chile, shallots, and garlic with a mortar and pestle or blend ingredients including lemongrass.
Sauté the blended ingredients in coconut oil on medium heat.
After 3-4 minutes, add turmeric powder and sauté again.
Once fragrant, add chicken.
Pour in coconut milk, water, and mix well.
Add salt and cover. Simmer for about 30 minutes or until chicken is cooked.
Sprinkle cilantro over top and serve!
