An easy low carbohydrate lunch that can be prepared in minutes. This KETO friendly meal is so tasty and only requires a few ingredients, most of which you probably already have in your kitchen.
This 10 minute meal is fast and delicious. If you don’t have the eggs already boiled it may take a few minutes longer, but you can speed up the process by boiling the eggs in advance.
This simple meal will require the following ingredients.
- 1 large Hard Boiled Egg
- 1/4 tsp. Onion Powder
- 1 stalk Celery
- 1 tbsp. Mayonnaise
- 2/3 tsp. Brown Mustard or dry mustard
- 2/3 tsp. Lime Juice
- 1/3 tsp. Frank’s Hot sauce
- 1/4 tsp. Cumin
- Salt and Pepper to taste
- 1 small Avocado
Prep all ingredients.
Combine ingredients in a bowl, except for avocado.
I’m not gonna lie, I used 2 eggs for this dish, I was extra hungry 🙂
Slice avocado in half and take the pit out. Combine cut egg with mixture.
Spoon egg salad into avocado. The recipe couldn’t be any simpler but yet so yummy..with a bit of kick. It’s also very satisfying and won’t leave you hungry.
As I have discussed in prior posts, I started on a diet January 1 of this year and have managed to keep the 10 pounds that I lost – off. I have another 5 pounds to go..but the last 5 are always the hardest. With the weather getting warmer, being outside more and socializing has ramped up..it’s getting harder to lose weight. But, I am confident and have the will to do so and I feel soooo much better and lighter on my feet…I don’t ever want to go back to bad eating habits. My cholesterol has decreased significantly since beginning a low carb, no sugar diet Jan 1. There are days I cheat and eat sugar and bread…but they are rare and I get back on my regime the next day. I still drink wine and champagne and enjoy life but I am careful about what I eat and drink plenty of water. My skin looks better and I feel overall much healthier. I highly recommend a low carb, low fat, low sugar diet..you will be amazed by the results.
